Again, not a bar I’ve actually been employed by, although you wouldn’t know it judging by how much time I’ve spent behind and in this bar. You could say it’s another home away from home. This is Australia’s tequila Mecca, opened in 1997 by my dear friend, the stark raving mad Phil Bayly, whom I’ve shared way too many tequilas with and have had the pleasure of visiting Mexico with on several occasions. The place hasn’t changed a bit over the years, still as fun and crazy as ever. Phil carries many tequilas you simply can’t get anywhere else and you’re always sure of a good time when he is holding court. On a visit home in 2010, I organized, hosted and bartended one night during the annual BarShow with my friend Charlie Ainsbury, offering up our own tequila cocktail menu, shown here.
