Barrio Chino – Sydney, Australia

In a weird circle of events, I was invited back to Sydney this June 2011 to consult on a new Mexican restaurant and tequila bar, located right next to my old digs at The Bayswater Brasserie in King’s Cross. Getting a wide variety of quality tequilas and mezcals in Australia was my main issue but we launched with about 80 in total, which gives us one of the best selections in the country. I went with an entirely agave-based cocktail menu which people were loving during the opening, as well as a selection of Margaritas and some more traditional Mexican drinks such as the Michelada, Paloma, horchata, Jamaica and our own sangrita. And there’s not a blender in sight.
