The Dutch is a comfortable, rustic, loud, neighborhood American restaurant opened in the Old Cub Room space in Soho by Andrew Carmellini, Luke Ostrom and Josh Pickard in April 2011. Designed by Roman & Williams, it was a huge opening for New York this year and I poured a lot into creating a benchmark restaurant drinks program in this city and country that has attracted huge attention for the elegant cocktails such as the White Manhattan and Barrel Aged Brooklyn. I have not seen anywhere else in this city with such an acute focus on craft American spirits and an ongoing and intense training program as well as a serious focus on classic cocktails and modern variations thereof. Well at least there was when I was there. The place will never be the same.
